Condensed Milk Into Caramel

I don’t know how it passed me by in childhood, but it wasn’t until I met my hubby in my late teens that I learnt about condensed milk into caramel.

He was a chef and was telling me that these cans were like magic how they went from sweetened milk to thick creamy caramel spread from just boiling them.

I was in love, and it soon gave me plenty of recipe ideas of ways that I could use these magic caramel cans.

Fast forward to getting our first instant pot in 2016, and you guessed it, we made instant pot caramel.

It became our go to.

So, when one of our readers recently asked us to transform condensed milk to caramel using the Crockpot, we were ready for the challenge.

And now whether you call it slow cooker caramel, slow cooker dulce de leche, or crockpot dulce de leche, lets make this Mediterranean 1 ingredient dessert hack.

Can You Make Dulce De Leche In A Crockpot?

Yes, you can, but don’t expect it to happen at the same speed as instant pot caramel. You see the point of instant pot dulce de leche is that it can be done in JUST 40 minutes compared to 4 hours on the top of a stovetop in a pan of boiling water.

When you make Crockpot caramel it will have a similar cook time to the stovetop. But unlike on the stove, you can walk away and leave the caramel and not have to worry about it.

What Is Dulce De Leche In A Crockpot?

Dulce de leche in a crockpot, or slow cooker caramel is a Spanish dessert staple. Whilst in the UK we use a lot of biscoff in desserts, dulce de leche is the first choice in Spain.

It will often be found in desserts such as dulce de leche cheesecake and also in biscuits, cakes etc.

If you have not had it before, its like a thick caramel spread and tastes so good, that you just want to grab a spoon and eat it directly from the can once cool enough to touch.

You can turn it from sweetened condensed milk like magic, into dulce de leche using the Crockpot.

Will Condensed Milk Turn Into Caramel?

Yes, it will. The condensed milk into caramel trick has never failed on me before. Just make sure you use sweetened condensed caramel and there is no reason why it will go wrong.

You also boil the cans of condensed milk using the Crockpot and its so easy.

What Is The Trick To Making Caramel?

The trick to making caramel is to use cans of sweetened condensed milk. Its so much easier and then you don’t have to mix up any ingredients.

You simply use cans of condensed milk and then let it work its magic.

Or if you live in a hot country like Spain or Portugal, you can leave the cans out in the sun, and they will convert without boiling!

Then for the kitchen gadgets that we have used in this dulce de leche crockpot recipe it has just been our Crockpot Slow Cooker. We have this one and its wonderful for many types of slow cooker recipes and also great for dessert.

Dulce De Leche Slow Cooker Mason Jar

You don’t have to, but you can transfer your dulce de leche into a mason jar. I do this because then I can keep it in the fridge without worrying that the kids will cut themselves on the side of the milk can.

Then its also easier to scoop some out and then use it in some desserts.

How Long Does Condensed Milk Caramel Last?

In the Milner kitchen, caramel sauce lasts about 10 minutes. Though if we did have willpower and there was not four people wanting to eat it straight away, it would last up to 4 days.

I recommend if using the slow cooker caramel for a dessert, that you make it the day before, fridge it overnight and then cook with it the next day.

FAQs

Do you cook caramel on high or low heat? ›

To achieve caramelization—and flavor—we first have to cook the sugar to a temperature of at least 320°F (160°C). This is best accomplished by cooking the sugar in a pot over medium to medium-high heat and adding either some corn or glucose syrup to your sugar or adding up to 20% of the weight of the sugar in water.

Do you stir constantly when making caramel? ›

Swirl, don't stir: While slow, deliberate stirring will help the sugar dissolve evenly, you want to stop stirring once it has fully melted.

Why is my homemade caramel so hard? ›

The water evaporates, leaving sugar crystals behind. If even one sugar crystal falls back into the pan of cooking caramel, it starts a chain reaction of sugar crystals and the entire pan will harden. The result? Gross, grainy caramel that is unusable in most recipes.

What is the difference between dulce de leche and caramel? ›

Caramel and dulce de leche might look and taste somewhat similar, but they are actually pretty different. While caramel is made from slowly simmering water and sugar until it caramelizes, dulce de leche is made from simmering milk and sugar super slowly until it turns into a creamy, caramelized substance.

How do you know when caramel sauce is done? ›

To avoid burning the caramel, it's just a matter of being vigilant. The melted sugar should be cooked until it's a deep amber colour — it's done when it starts to smoke and begins to foam just a little bit. At this point, it should be removed from the heat immediately to stop the sugar from darkening any further.

Can you overcook caramel? ›

It tastes burnt because you're burning it. Pull your caramel from the heat when it is light amber in color. It will continue to cook and darken as it cools. If you leave it on the heat until it reaches the final desired color, it will overcook.

Why is my homemade caramel so runny? ›

Too short of a cooling time: Caramel sauce thickens significantly as it cools, so let the caramel cool for the appropriate time to achieve the right thickness. If the sauce is still too thin after cooling completely, place it back on the stovetop and reheat it on low heat for a few additional minutes.

Why does my homemade caramel taste bitter? ›

Overheating the mixture

Be very careful as you heat your caramel. Follow the recipe carefully, and never melt your caramel on your stove's highest setting—it will cause the caramel to scorch and taste burnt. Once it gets a burnt or bitter flavor, it can't be saved.

Should you stir sugar when making caramel? ›

Sometimes other ingredients are included, like corn syrup or water. Either way, once the crystals are melted, they do not want to be agitated. Instead of stirring, you gently swirl the melted sugar around in the pan to keep it moving and avoid burn spots.

How do you know when caramel is done with condensed milk? ›

Bring it to a simmer over medium heat. Stirring occasionally, simmer for one-and-a-half to two hours, until the milk becomes thick and reaches the desired caramel color.

Is butterscotch the same as dulce de leche? ›

Butterscotch is made from cooking down brown sugar with butter, and its flavor is sweeter and softer than that of caramel. Dulce de leche is made from slowly cooking cow milk and sugar together. Dulce de leche made with goat milk is known as cajeta.

Can you use sweetened condensed milk instead of dulce de leche? ›

Dulce de leche is basically sweetened condensed milk that has continued cooking until the sugars have caramel used. You can make SCM into DdL by boiling the unopened can of SCM for a couple of hours. Let it cool before trying to open it.

Do you make caramel on low heat? ›

Cooking caramel over low heat may seem like it's the safest bet, since over high heat, the sugar can go from just right to burnt in a flash. But using low heat makes the process tediously long, which is why we use two heat levels: We first melt the sugar over medium-high heat.

Do you caramelize on high heat? ›

Caramelizing can get a little sticky and you don't want to ruin a pan. Chop your food into smaller (uniform) pieces or slices so that they cook evenly. Start off with high heat to kick the caramelization process off and then turn heat to low. Once cooking you'll continue the process low and slow.

Is caramel made on low heat? ›

Stir the water and sugar together in a large heavy-bottomed, light-colored pan. Set the pan over medium high heat. Stir occasionally, allowing the sugar to dissolve.
