  • Preheat oven to 400 degrees F. Spray a 9 x 13 inch pan, with nonstick cooking spray.
  • Peel all the potatoes, with a potato peeler, then slice them into thin rounds. These should be less than 1/4 inch wide.

  • Lay out your potato slices on the bottom of the pan. Make sure you only do one layer of the sweet potatoes.

Why do you soak sweet potatoes before baking? ›

The cold water bath helps rinse the starch off the sweet potatoes so they're a bit more crispy. That said, if you do not have the time, you can still get crispy baked sweet potato fries by using high heat and a little drizzle of olive oil.

Why use salt water for soaking potatoes? There's moisture naturally found in potatoes, and moisture is drawn to higher concentrations of salt. (This is a process called osmosis.) So, if you put the potatoes in a salt water bath, that will help draw out some of their moisture, resulting in crispier fries.

Should I poke holes in potatoes before baking? ›

Is it better to bake a potato at 350 or 400? ›

We recommend baking potatoes at 400 degrees F for about an hour. Smaller spuds might take a little less time, while larger baking potatoes over 1 pound might take a little more.

Do sweet potatoes get sweeter the longer you cook them? ›

A study from 2012 found that the sugar content of one type of sweet potato was almost five times higher after baking for 90 minutes, mainly due… to an increase in maltose. A fragrant aroma and soft texture are also important to the experience, and the cooking method has a big effect here.

What brings out the flavor of sweet potatoes? ›

Browning butter packs in tons of flavor, without dulling the sweet potatoes. Slow-roasting the sweet potatoes activates endogenous enzymes that bring out their natural sweetness.

How do you soak sweet potatoes to remove starch? ›
