Aunt Val's Caramel - the Best Ever Homemade Caramel Recipe (1)

Okay folks, this is my go-to homemade caramel recipe. I almost want to keep it a secret. It is that easy and delicious. If you haven't figured this out about me yet I am a sucker for things that are awesome and easy. Does that make me lazy? Probably. Will I ever change? Doubt it.

Anyway back to the topic at hand!

Homemade Caramel

Every fall we make this homemade caramel sauce and it is one of my kids favorite traditions! For good reason too because this stuff is to die for good.

You can use this homemade caramel in a multitude of ways. My two favorites are caramel popcorn and caramel ice cream sundaes. Not your thing? Cake? Brownies? Dip for apples? Yes, yes and yes.

Ingredients for Homemade Caramel

  • Brown Sugar
  • Butter
  • Karo Syrup
  • Sweetened Condensed Milk

It really is so simple! Like most of the recipes I post on this blog, it is cost effective. I always have all these ingredients on hand (granted, the Karo syrup is only on hand for this very recipe, but still.)

All you do is melt the ingredients in a saucepan over medium-low heat. Once caramel is boiling cook for approximately two minutes stirring constantly.

It doesn't get any easier than that!

How to Make Caramel Popcorn

  • Pour caramel over popcorn immediately after removing it from the stove. This recipe will cover three or four bags of microwave popcorn thoroughly.
  • Store leftovers in an airtight container for up to a week.
  • This caramel is soft and so it will make soft, gooey caramel popcorn (my favorite kind). If you prefer a crunchier, harder caramel popcorn you can spread your caramel covered popcorn out on a greased baking sheet and bake at 250 for about an hour, turning every 15 minutes or so.

I think it would be so cute to put this in the baby canning jars to give as gifts, just enough for a few bowls of ice cream once opened.

FAQs

Should you stir sugar when making caramel? ›

Swirl, don't stir: While slow, deliberate stirring will help the sugar dissolve evenly, you want to stop stirring once it has fully melted.

How do you keep caramel from crystallizing? ›

To make a perfect easy caramel every-time, simply add one or two drops of vinegar and just enough water to wet the sugar. The idea is to lower the PH. you can also use a small pinch of citric acid or cream of tartar if you have.

Why is my caramel sauce not turning brown? ›

Once the sugar is melted, the liquid will turn a golden color. However, to caramelize it, you want that shade to darken, so you need to keep it on the heat for around another six to eight minutes. Be aware that if you've used brown sugar, the liquid will darken faster than if you've used white sugar.

What thickens homemade caramel? ›

To thicken a caramel sauce, use one tablespoon of cornstarch or tapioca starch (sometimes known as tapioca flour) and one tablespoon of water per cup of caramel. Then simmer the caramel, stirring it constantly with a wooden spoon until it becomes thick.

Why is my homemade caramel so hard? ›

This is usually caused by sugar crystals stuck to the side of the pan that didn't get fully dissolved. It only takes one to set off a chain reaction, and before you know it you have crunchy caramel.

What happens if you stir caramel too much? ›

Stirring the sugar

If the melting sugar splashes up onto the sides of the pan, it quickly loses its moisture content and forms back into crystals. That can set off a chain reaction that can cause caramel to seize up, ruining the entire batch.

Why does my homemade caramel taste bitter? ›

The temperature of the caramel can rise so rapidly that it is hard to keep it in the desired temperature range, shown above. As a result, the caramel could burn and taste bitter.

Why is my sugar clumping when making caramel? ›

If too many bits of sugar get stuck to the side of the pan, they will harden and can cause the caramel to seize or become gritty or grainy when you add in the butter and/or the cream. Prevent this by gently swirling the sugar around as it melts, while holding the pan's handle, instead of using a utensil to stir it.

Why add lemon juice when making caramel? ›

The acidic nature of lemon juice prevents the formation of sugar crystals. Just a small squeeze of lemon juice added to the sugar as it melts can make a big difference in the outcome of your caramel.

What are 3 key ingredients that are added to caramels to prevent it from crystallizing? ›

Adding an acid like lemon juice is another way to prevent sucrose from crystallizing. The cream and butter also act as “interfering agents” as the milk proteins in both help to prevent crystal formation. Ingredients such as vanilla, flavorings, salt, and nuts (or baking soda for caramel corn) are all added at the end.

How do you fix caramel that didn't set? ›

you simply haven't cooked it enough-- possibly your microwave is less powerful (the original recipe doesn't specify a wattage for cooking the caramel) or the butter you used has a higher water content. You could try cooking the mixture for a little longer, and seeing if it sets up firmer.

How do you know when caramel is done? ›

To avoid burning the caramel, it's just a matter of being vigilant. The melted sugar should be cooked until it's a deep amber colour — it's done when it starts to smoke and begins to foam just a little bit. At this point, it should be removed from the heat immediately to stop the sugar from darkening any further.

Why is my caramel still white? ›

If it starts to simmer and your sugar is still in granules and has NOT dissolved, that can crystalize your caramel. You can swirl the pot — or at this point, you can go in with a clean spatula and stir it. Once all the sugar is dissolved, THEN you can turn up the heat and allow the mix to simmer.

Does baking soda speed up caramelization? ›

Baking soda makes the onions more alkaline, which speeds up the browning reactions necessary for properly caramelized onions. But it also weakens the pectin that holds the onion's cells together, turning what should be soft but distinct pieces of browned onion into a nauseating stew of pea-green mush.

What enhances caramel flavor? ›

Finally, caramel is always enhanced with the addition of citrus zest, especially orange zest, or by substituting fruit puree for some of the cream in the caramel base recipe.

What does adding more baking soda do? ›

Too much baking soda in a recipe can give your baked goods a metallic or soapy taste, so be careful with your amounts in conversions. As a rule of thumb, 1 teaspoon of baking powder is equivalent to ¼ teaspoon of baking soda in terms of leavening power.
